Vaux's Swifts
A highlight of Portland in September is a spectacular display of nature as Vaux's Swifts gather to roost in an elementary school chimney every evening at sunset. We highly recommend this free, outdoors event at Wallace Park in northwest Portland, and invite you to join us for a viewing on Friday, September 9 at 7:00 p.m.

Cake tasting!
From what I hear, some women dream of their perfect wedding all their young lives. The dress, the setting, the grand entrance... I can't claim to have given all those details much thought until this year, but one thing has always stood out in my imagination: the cake. I have a long history with cake, dating back to my elementary school days when I always responded to "favorite food?" with "chocolate cake." One of my fondest memories is of a cake walk sometime around second grade, which I won twice--two cakes! (I picked my mom's yellow cake with chocolate frosting first, a great victory after watching her make it and traveling with it to the school fair.) Life was sweet that night, very sweet.
It was on the website of Baker & Spice, one of my favorite bakeries in town and writers of a wonderful baking book, that I found our cake. Or rather, cakes. Our plan is to have several cakes in different flavors, lined up for the choosing. How better to celebrate our love than to have our own version of a cake walk, sans the walk? The decision was easy, but I was not ready to forgo cake tasting entirely. So, Chris and I had our own private tasting at home with a variety of Baker & Spice cupcakes. All-butter: check. Cream cheese frosting that retains its light tartness: indeed. Fruit filling: not applicable, but the lemon chiffon cake was super lemony--evidence enough for me.
Baker & Spice, welcome to the party.
So, it was only natura
l that I brought up cake tasting about 15 minutes after Chris proposed; critical planning components first, right? At that point, I envisioned appointments every weekend for months. Cake after cake after cake, until I could tell you from memory which bakeries are all-butter, which keep a nice tart edge on their cream cheese frosting, and who makes their own fruit filling. As I started researching cake bakeries that offer tastings, though, I realized they might not be up my alley. I didn't want fondant, didn't need a tower of layers or elaborate decoration, and certainly wasn't planning on anything to the tune of $8/slice. I just wanted CAKE. Butter, flour, sugar, eggs, and frosting, simple and satisfying.
